Fruit Packs & Fruit Purées


Fruit Packs and Purees provide flavor and fruit show to ice cream. They are made from real fruit and make up a lot of the classic ice cream flavors we know and love, such as strawberry ice cream or peach ice cream.

 

Fruit Purees

Fruit purees are made with fruit that has been chopped into a fine texture and provides even fruit dispersion in finished ice cream.   Fruit levels in fruit purees can range from 20% to 80% fruit and they are frequently formulated with added flavor and color to enhance the visual appeal and taste of the finished ice cream.

Fruit purees with lower levels of fruit, which are generally thinner in viscosity, can be added directly to the flavor vat and run through the ice cream freezer. Fruit purees with higher levels of fruit are more stabilized (thicker) and are added to the fruit feeder and blended into ice cream after the ice cream is frozen.

Fruit purees are heat treated during manufacturing for use in ice cream applications. This ensures a safe product for direct addition into the ice cream.

 

Fruit Packs

Fruit Packs contain real fruit pieces, providing great fruit show in finished ice cream. Like purees, they often have added flavor and color to enhance the visual appeal and taste of the finished ice cream.

Fruit packs are more stabilized to keep the fruit pieces evenly dispersed in the container and are always added through the fruit/ingredient feeder and blended in the ice cream after the ice cream is frozen.

Fruit packs are heat treated during manufacturing for use in ice cream applications. This ensures a safe product for direct addition into the ice cream.
